About "Plates Across The States"
When is a food column more than a food column? When it is written
by a premiere chef who has cooked on four continents and has an
informed insight into the historical and cultural perspective of
food preparation and presentation as well as a passion for travel,
all filtered through his unique sense of humor, and goes by the
title of Chef-At-Large™.
“Plates Across The States” is a monthly newspaper column
that showcases the cuisine and history of cities and states throughout
the United States in a way that is not only informative, but also
very entertaining. Inspired by a cooking show he created in the
U.K. to introduce the richness and variety of American dishes to
a European audience, each month, Rocky Durham, Chef-At-Large™
trains his talents on one of the 50 states. Rocky provides readers
with a unique look at numerous aspects of one of our state’s
local dishes, including the origin of the ingredients, the traditions
and history surrounding its creation, interesting (and most likely
little-known facts about the area), a recipe on how to prepare the
dish, and his personal perspective and experience with the food.
Accompanying each of the columns is a full-color photograph of
the featured dish ready for presentation. Included in each of the
shots is also a postcard from the area, which at a glace enables
the reader to identify the city or state that the dish has made
famous – or vice versa. Rocky’s passion for travel nearly
equals his passion for cooking and food, so a large component of
this column’s unique contribution to the food genre is the
travelogue element that is represented in the text, as well as the
photographs. And Rocky’s humor will have many readers literally
laughing out loud at his observations.
With his extensive international experience as a professional chef,
Rocky has witnessed firsthand the enthusiastic interest that non-Americans
have for American cuisine, so this column not only serves to introduce
an American audience to new and unfamiliar treats of their own country,
it will certainly find an audience with gastronomes all over the
world.
